Cheeseburger Spring Rolls

Ingredients

Spring Roll Filling
  • 500g premium beef mince
  • 10 slices dairyworks cheddar cheese (diced)
  • 1 small white onion (finely diced)
  • ½ cup dill pickles (finely diced)
  • ⅔ cup american mustard
  • ⅔ cup tomato ketchup
Other
  • 1 egg (beaten)
  • 12 large spring roll wrappers
  • 2 cups vegetable oil

Method

  • Cook mince in a stainless steel pan on medium heat and season with salt and pepper.
  • Once cooked, transfer to a glass bowl and place in fridge.
  • Mix sauces, pickles, onion and cheese until combined.
  • Mix cooled mince and cheese/sauce mix until combined.
  • Place 4 tablespoons of mixture onto the lower middle section of the spring roll wrapper, ensuring the corner is facing you.
  • Bring the bottom corner of the wrapper up and over the filling, tuck the side corners over and roll, leaving 3-4 cm until the top corner.
  • Using a basting brush, spread a small amount of egg on the top corner and roll the filling towards it, sealing the roll.
  • Heat the oil to 170c and fry the rolls until golden brown.
